Handmade meatloaf of beef and pork. Free-formed loaf yields more crispy crust. Herbs, bacon and peppers send it uptown!

Ingredients

  • 1.5 lb ground beef
  • 1-1.5 lbs ground pork
  • 2 slices stale bread broken up and soaked in 1/2 cup cream for 1/2 hour
  • 4 strips thick bacon
  • one half yellow onion, finely chopped
  • 2 Tbs chopped bell pepper
  • 1 egg
  • 2 Tbs Worchestershire Sauce
  • 1/4 cup catsup
  • 1 Tbs grainy mustard
  • a good shake of Laury's Season Salt
  • a good shake of garlic salt
  • a good shake of lemon pepper
  • If available, 1/2 tsp each of fresh oregano, thyme, basil, and parsley

Directions

  1. Combine the beef and pork, then work in the soaked bread
  2. Mix in the remaining ingredients
  3. Form into a loaf in the cooking pan
  4. Rub lightly with olive oil
  5. Sprinkle on lemon pepper and garlic salt
  6. Bake at 400° for 1/2 hour, then lower to 375° for 50-60 minutes

Notes

Tasty crust alternative: Mix some catsup, mustard and brown sugar to form a thick paste. Coat the meatloaf with this paste before baking instead of the olive oil and seasonings.
