A family favorite recipe from New Zealand, Belgium Biscuits (no, not “Belgian”) are a holiday staple.  These cookies are built with two thinly-rolled spiced biscuits, sandwiched around a layer of raspberry jam, and topped with pink creamy icing & a sprinkling of cinnamon.
