Handmade meatloaf of beef and pork. Free-formed loaf yields more crispy crust. Herbs, bacon and peppers send it uptown!

Ingredients
- 1.5 lb ground beef
- 1-1.5 lbs ground pork
- 2 slices stale bread broken up and soaked in 1/2 cup cream for 1/2 hour
- 4 strips thick bacon
- one half yellow onion, finely chopped
- 2 Tbs chopped bell pepper
- 1 egg
- 2 Tbs Worchestershire Sauce
- 1/4 cup catsup
- 1 Tbs grainy mustard
- a good shake of Laury's Season Salt
- a good shake of garlic salt
- a good shake of lemon pepper
- If available, 1/2 tsp each of fresh oregano, thyme, basil, and parsley
Directions
- Combine the beef and pork, then work in the soaked bread
- Mix in the remaining ingredients
- Form into a loaf in the cooking pan
- Rub lightly with olive oil
- Sprinkle on lemon pepper and garlic salt
- Bake at 400° for 1/2 hour, then lower to 375° for 50-60 minutes
Notes
Tasty crust alternative: Mix some catsup, mustard and brown sugar to form a thick paste. Coat the meatloaf with this paste before baking instead of the olive oil and seasonings.
